Beef Wellington w/ Brussels sprouts
Beef Wellington with Brussels sprouts, some good red wine and a great time with the family.

The reason for posting some of my old meals is because I loved making them and serving them to my family or close friends.
It was served after smashed potatoes with scallops and a green spinach pesto on top of it.
Why and where from?
For this meal, I drew inspiration from @samseats on TikTok. I've always wanted to try my hand at a classic dish, so Beef Wellington was the perfect choice. Additionally, I aimed to surprise my family and alleviate some Christmas stress for them. Making this was so much fun, besides the perfect taste which led to every of my family member eating almost three pieces.
Recipe:
2 puff pastries, egg yellow on the inside and intersection
Spinach pancakes:
- 300 gr of flour
- 300 ml of milk
- Salt and pepper
- 3 eggs
- 400 g of fresh spinach
- A little bit of nutmeg
150 gr of Serrano ham
400 g of Champignons, gently roasted and deglazed with red wine
1 kg of beef filet mignon, cut to an even thickness, and seared on all sides in a hot pan
Preparation:
Roll the Beef Wellington inside cling wrap, let it rest for 30 minutes, and then put it into a preheated oven at 200°C. Cook for 20-25 minutes until medium-rare. Allow it to rest for 15-20 minutes after removing it from the oven. Serve with red wine bone sauce and Brussels sprouts.
